– Perfect Lunch –
I am sitting in a cafe sipping on a matcha latte, hoping that next week the weather will be better than this weekend. It is officially autumn now and I am not sure how to feel about it. Where has summer gone? I am am all for drinking tea snuggled up on the sofa but I hate the rain and the cold. I know, you might ask yourself why I moved to the country known for it’s gloomy weather but trust me, Switzerland is not better, as soon as the sun shines, there is so much wind that you have are in constant fear to be blown away. Well enough ranting about the weather, one week in living in London and I am already becoming that person only talking about the weather, who am I?
Now onto this salad which to be honest doesn’t really count as a salad for me. It is so comforting and yummy, the perfect lunch. All the flavours work so perfectly together. It is no secret that sweet potatoes work well with black beans and cilantro but this whole thing is a match made in heaven. It is fresh, sweet, spicy, oh I just love it. I must admit that I got the idea when I first had a similar one in my favourite cafe back in Switzerland, at Le Pointu. They make the best brunch in Lausanne and after having my first bite there, I knew that I had to try and remake it at home. It is so flavourful and filling and you will feel amazing afterwards thanks to all the healthy ingredients and nutrients.
I like to serve mine with hummus and flatbread and a little bit of lettuce. I once topped it with some feta and it tasted amazing so I really recommend that as well. I can imagine that it would taste great with a poached egg on top (imagine the egg yolk running over the salad, yumm!)
*Make sure to use a red onion as it really makes a difference and adds this amazing sweet taste to it. This will serve 2 to 3 people depending on the hunger.*
- 2 large sweet potatoes
- 1 can of black beans
- 1 small chopped red onion
- 1 tbsp olive oil
- Juice of 1 lime
- 1/2 tsp paprika
- 1/2 tsp cumin
- Chopped cilantro
- Chopped chives
- Chilli flakes
Preheat your oven to 150°C
Peel and cut your sweet potatoes into small cubes, mix them with the oil, paprika, cumin, salt and pepper and roast for 20-25 minutes.
Meanwhile mix the onion, lime juice, garlic and chilli with your fresh herbs (as much as you’d like) and let it sit.
When your potatoes are soft let them cool for a few minutes and mix them with the beans and the onion mixture. Adjust the taste with the spices.
Serve on its own or with some flatbread, hummus and feta.
