- A GRAIN-FREE ALTERNATIVE TO YOUR FAVOURITE BREAKFAST -
I recently went to Whole Foods – which is like a food museum – and went on the hunt for the offers of the month. That’s when I stumbled across the Paleo Foods Co granola and I immediately fell in love with it. It is so good, I repurchased it twice already. I always thought that granola has to be made with oats as a base but after trying this one, this thought shifted and I wondered if I could make something similar. Turns out it is not only super easy but oh so tasty.
This granola is grain-free, has a nice crunch with a lot of different textures and is super good for you as it contains a lot of healthy fats coming from nuts and seeds. It is sweetened with honey but if you are vegan you can probably make it with date syrup or maple syrup.
Enjoy it on top of some yoghurt with fresh fruit, with some kind of milk or on its own as a snack.
- 1 Cup Coconut Flakes
- 1/2 Cup Slivered Almonds (add in a few whole ones for crunch)
- 1/4 Cup Sunflower Seeds
- 1/4 Cup Cashew Nuts
- 1/8 Cup Pumpkin Seeds
- 1 Tsp Chia Seeds
- 1 1/2 Tbsp Honey
- Pinch Of Salt
Mix all the ingredients in a large bowl until everything is coated with the honey. The mixture should be quite sticky.
Then spread it in an even layer on a baking tray and bake for 7-10 minutes at 150°C. Always keep an eye on it as it burns very quickly.
Let it cool completely and store in an airtight container for up to a month – it probably won’t even last a week.
