Almond Vanilla Granola

Healthy breakfast

Breakfast is probably my favorite meal of the day. I love having a fresh start to the day with a nice bowl of muesli with some fruit. But sometimes I like to have something else so I decided to make my own granola as it is really hard to find a healthy vegan granola here in Switzerland. This granola is super easy, takes no time at all and you will only need five ingredients that you probably already have at home. Perfect right?

I love the vanilla mixed with the subtle almond taste. I served mine with homemade almond milk, blueberries and fresh figs (I love fig season). It was de-li-cious!

If you like it to be a bit sweeter, feel free to add more maple syrup or even better, some dried fruit like raisins or chopped dates.

You will need:

  • 2 cups of oats
  • 2 tbsp of almond butter
  • 2 tbsp of maple syrup
  • 1/2 tsp of vanilla
  • A pinch of Himalayan salt


  1. Preheat oven to 180c
  2. Mix all the ingredients until well combined.
  3. Lay the mixture out on a baking tray and bake for 5 to 10 minutes. Always keep an eye on it because it goes brown really fast.
  4. Take it out of the oven and let it cool for about 20 minutes. Do NOT touch it if you want to have clumps.
